Mark Flower

New Restaurant Opening Coordinator

Mark Flower is in charge of the training program for all new restaurant openings. He assists in all training department functions, such as doing interviews for the Redshirt program and carrying out the new certified trainer classes. In the training department, Mark and the rest of the team are always looking for way to help staff develop their knowledge and skill to better serve guests.


Background

Mark attended The University of Missouri, where he studied business management. His first restaurant job was in college, at a place called Sophia’s. Mark started as a busser, moved up to server, then bartender, then manager at Sophia’s. He soon moved to Chicago, where he found his passion for the industry. After moving to Chicago, Mark became a manager at Doc B’s Fresh Kitchen. In August, Mark joined the Bottleneck Management home office. Prior to this, he worked with the training department for over two years as a Traveling Trainer doing seven restaurant openings. He first began his career with Bottleneck Management in June 2015 at Howells and Hood, as a server and Redshirt.


Outside of Work

Mark is a huge sports fan, and loves watching almost any football or basketball game—college or pro. As most people do, he enjoys going out to bars and hanging out with friends. Mark likes to visit the lake of the Ozarks at his parent’s lake house. When back home in St. Louis, Mark loves riding his motorcycle. He enjoys documentaries and bar trivia too.
