Tex Mex Mac n’ Cheese Recipe

We know the Tex Mex Mac n’ Cheese was a favorite for many, and although we had to bid farewell to make room for new creations, we understand how it feels to see a beloved menu item go.

So, we’ve got a little treat for you – we’re sharing the Tex Mex Mac n’ Cheese recipe so you can recreate the iconic dish in the comfort of your own kitchen. Think of it as our way of saying “thank you” for all the love and support.

Pepperjack Cheese Sauce

Ingredients:
  • Sliced White American Cheese- 2.5 Lb.
  • Yellow Onions, diced – .25 Lb.
  • Jalapeño, de-seeded and diced – .25 Lb
  • Red Bell Pepper, diced – .5 Lb
  • Garlic, peeled and minced – 1 Tablespoon
  • Red Pepper Flakes- 1 Tablespoon
  • Kosher Salt – 1 Tablespoon
  • Unsalted Butter- .25 Lb.
  • All Purpose Flour – .25 Lb.
  • Whole Milk – 8 cups
Instructions:
  1. In a large pot, melt butter.
  2. Once the butter is melted add the jalapeno, onion and red pepper. Cook until fragrant.
  3. Add garlic. Cook until fragrant.
  4. Once the vegetables have slightly softened, add the flour.
  5. Create a roux with vegetables and flour. Add milk and dry seasonings.
  6. Bring to a simmer until sauce thickens, turn down heat and cook out roux for 5 minutes while stirring constantly.
  7. Slowly whisk in cheese and stir until completely melted.

 

Tex Mex Mac n’ Cheese  Recipe (serves 4)

Ingredients:
  • Cavatappi Pasta – 16 oz
  • Heavy Cream – 6 oz
  • Cooked Chorizo – 12 oz
  • Roasted Piquillo Pepper, diced – ½ cup
  • Pepperjack Cheese Sauce, recipe above – 24 oz
  • Crispy Tortilla Strips or Tortilla Chips Smashed – 1 oz
  • Cilantro Leaves- ¼ cup
Instructions:
  1. Bring a pot of water to a boil and cook cavatappi pasta
  2. In a sauté pan, add cream, jack cheese sauce, cooked chorizo and piquillo peppers and bring to a soft boil
  3. Add pasta to saucepan, boil sauce and pasta together for 1 minute.
  4. Place sauced pasta into a serving bowl
  5. Top with crispy tortilla strips and cilantro leaves
