Paul Williams

Director of Operations

Paul joined Bottleneck in 2016 as the opening General Manager of Old Town Pour House in Naperville. In 2019, he opened the first Chicagoland City Works Eatery & Pour House in Schaumburg as the General Manager. A year later, Paul was promoted to Director of Operations and is responsible for providing support and leadership to multiple restaurants.


Background

Paul started working in restaurants in high school and decided to pursue a career in the industry by attending Purdue University’s School of Hospitality and Tourism Management. After graduation, Paul began working for Bonefish Grill where he helped grow the brand, oversaw several new restaurant openings, and led service and culinary operations. He then went to Fleming’s Prime Steakhouse and Wine Bar and became the wine director and service manager, working there for eight years. Before joining Bottleneck, Paul was a wine director and manager for The Capital Grille, a property that was the recipient of multiple diamond club awards.


Outside of work

Paul enjoys playing golf, watching Chicago sports and Purdue football, all of which he does with a great brew in hand.
