Paul joined Bottleneck Management in 2016 as the opening General Manager of The Old Town Pour House in Naperville. The restaurant soon became the training restaurant for Bottleneck Management. In 2019 Paul opened the first Chicagoland City Works Eatery & Pour House as the General Manager. A year later, Paul was promoted to Director of Operations and is responsible for providing support and leadership to his teams.
Background
Paul started working in restaurants in high school and decided to pursue a career in the business attending Purdue University’s School of Hospitality and Tourism Management. After graduation, Paul began working for Bonefish Grill where he helped assist in growing the brand and oversaw several new restaurant openings, and led service and culinary operations. He then went to work for Fleming’s Prime Steakhouse and Wine Bar and became the wine director and service manager and worked for that company for 8 years. Prior to joining Bottleneck, Paul was a wine director and manager for The Capital Grille, a property that was the recipient of multiple diamond club awards.
Outside of work
Paul enjoys playing golf, watching Chicago sports, and Purdue football all of which he does with a great brew in hand.
